IU Dining supports the goals and mission of Indiana University by providing a professional and welcoming atmosphere with excellent customer service, affordable options, and innovative cuisine to a diverse university community. As part of an updated master plan for food services, Indiana University created a new dining commons. It was comprised of ten smaller food hall style venues.

Challenge
We were required to develop a new system to execute food service at the university. Train and Implement new types of cuisines, cooking methodology and production structure.

Objective
For this project, we acted as the CIA Consulting project leader working with IU culinary team to facilitate an ideation session followed by concept development. Ultimately IU with the help of the CIA’s guidance, was able to create their own branded unique concepts in the Woodlands Dining Hall.  Indiana University then issued an RFP for consultancy services to help design menus and recipes for each venue, as well as provide hands-on training and opening support for the dining commons.

The CIA won the proposal and, over the course of several months, faculty and staff from the CIA created new menus and recipes and then worked together with Indiana University culinary leadership to provide training in order to implement the new menus.  This project was immediately successful and has generated additional post-opening support and training projects that still continue today.
